RED WINE “ORGANICO”
HARVEST 2015
“Organico” red wine is produced from the grapes of some old small vineyards and from those coming from the “Don Mosè” vineyard. The small vineyards are located in different areas of Supersano, in the Lecce province, at the foot of a plateau locally called “Madonna of Coelimanna”.
The vineyards have been recovered from abandonment and restored to a microbiological equilibrium, respecting the organic agriculture principles, and they are trained using the traditional “gobelet” technique. The average production is between 20 and 30 quintals per hectare.
Blend: from the mixture of the following grapes, which are present patchy in different vineyards: Primitivo, Negroamaro, black Malvasia of Lecce, Sangiovese, Montepulciano, Ciliegiolo.
Vinification: maceration on the skins for 3 days and soft pressing at a controlled temperature, then fermentation for 15 days at a temperature between 20 and 25 ° C.
Aging Technique: aging in a stainless steel tank for a 12 months period, and for additional 3 months in bottles.
Harvest: hand-harvested on 14th September 2015.
Alcohol content: 15% vol.
Serving temperature: in order to appreciate the organoleptic qualities of this wine, it’s recommended to serve it at a temperature of about 16-18 °C.
Production: 750 bottles (750ml)
